Maple Syrup Crepes

Ingredients

Crêpe Batter

  • 3 tablespoons butter
  • 1¼ cup all-purpose flour
  • 1 tablespoon sugar
  • ½ teaspoon kosher salt
  • 2 ½ cups whole milk
  • 2 large eggs, room temperature
  • 1½ teaspoons pure vanilla extract

Maple Sauce

  • 1 cup dark maple syrup
  • ½ cup butter

 

Instructions

Make the Crêpe Batter

  1. Melt the butter and cool for a few minutes. Add the cooled, melted butter and the remaining ingredients into a large bowl and whisk gently until the batter is smooth. Let the batter rest for 1 hour in the refrigerator. While the batter rests, make the maple sauce.
  2. Add the maple syrup and butter into a medium sauce pot and simmer over medium heat. Once it has simmered, remove it from the heat and set it aside.
  3. Preheat your oven to 375°F. Once the crêpe batter has rested, make the crêpes. Place a crêpe pan, or a non-stick pan, over medium heat, and let the pan get hot. Remove the batter from the fridge and give it a quick stir. Add about 3 tablespoons of crêpe batter to the center of the pan. Using a crêpes spatula, spread the batter out in a circular motion covering the whole pan. Cook for 1-1½ minutes then flip and cook for another minute. Once the crêpe is cooked, roll it up and place it into a 9x13” baking dish. Repeat this process until all the crêpe batter is used.
  4. Once all the crêpes are in the baking dish, pour over the maple sauce and bake for 20 to 25 minutes.
