Maple Syrup Crepes
Ingredients
Crêpe Batter
- 3 tablespoons butter
- 1¼ cup all-purpose flour
- 1 tablespoon sugar
- ½ teaspoon kosher salt
- 2 ½ cups whole milk
- 2 large eggs, room temperature
- 1½ teaspoons pure vanilla extract
Maple Sauce
- 1 cup dark maple syrup
- ½ cup butter
Instructions
Make the Crêpe Batter
- Melt the butter and cool for a few minutes. Add the cooled, melted butter and the remaining ingredients into a large bowl and whisk gently until the batter is smooth. Let the batter rest for 1 hour in the refrigerator. While the batter rests, make the maple sauce.
- Add the maple syrup and butter into a medium sauce pot and simmer over medium heat. Once it has simmered, remove it from the heat and set it aside.
- Preheat your oven to 375°F. Once the crêpe batter has rested, make the crêpes. Place a crêpe pan, or a non-stick pan, over medium heat, and let the pan get hot. Remove the batter from the fridge and give it a quick stir. Add about 3 tablespoons of crêpe batter to the center of the pan. Using a crêpes spatula, spread the batter out in a circular motion covering the whole pan. Cook for 1-1½ minutes then flip and cook for another minute. Once the crêpe is cooked, roll it up and place it into a 9x13” baking dish. Repeat this process until all the crêpe batter is used.
- Once all the crêpes are in the baking dish, pour over the maple sauce and bake for 20 to 25 minutes.
